Chocolate cookies form the crust of this traditional no-bake pudding pie recipe. Sprinkle the top with crushed peppermint candies for a festive look.

Generously grease a 9-inch pie plate; set aside. For crust: In a medium bowl, combine crushed chocolate cookies and melted butter. Press mixture onto the bottom and up the side of the prepared pie plate. Cover and chill for at least 15 minutes.

Meanwhile, prepare pudding mix according to package directions for traditional pudding pie, using the 1-1/2 cups milk. Spread filling in the chilled crust. Cover and chill for 8 to 24 hours.

Before serving, in a small bowl, combine whipping cream, powdered sugar, and peppermint extract. Beat with an electric mixer on medium speed until stiff peaks form (tips stand straight). Spread whipped cream over top of pie. Sprinkle with crushed peppermint candies. Makes 8 servings.

In short? It was great. We saw, we ate, and we laughed so hard we cried. And we also decided to make dinner in one night, which was my favorite meal by far.

The reason I was absent last week from the blog is because I was on the other side of the country! Visiting one of my coworkers with two other of my coworkers. It was a slight spur-of-the-moment trip, but after the three of us saw the snow, cold, and general blechy weather heading our way (we’re from Pennsylvania, Minnesota, and Wisconsin), we found an Airbnb, got our plane tickets, and planned for our trip to sunny California.

When ready to serve, top with some more whipped cream, sprinkle with crushed candy canes – and if you like a peppermint stick North Pole!

First: Cookie Crust & Ganache!

Whip cream and remove to a separate bowl. Then mix cream cheese with the cooled white chocolate ganache and the other ingredients!

Then: Make the Filling Fluffy!

  • Make 2-Ingredient Oreo Crust
  • Stir together hot cream and chocolate chips to make ganache
  • Spread cooled ganache into crust
  • YUM. Chill until ready to fill
